  • For Cover : -
  • 2 cups - Refined flour (Maida)
  • 1 tbsp - Rice flour
  • cup - Cream
  • tsp - Carom seeds (Ajwain)
  • For Filling : -
  • 1 cup - Cauliflower grated
  • 2 cups - Potatoes boiled
  • cup - Green Peas blanched
  • 6-7 - Green chilli
  • 1 tsp - Ginger paste
  • tbsp - Coriander chopped
  • tbsp - Garam masala
  • tsp - Turmeric powder
  • 1 tbs - Cashew nut chopped
  • 4 pinches - Asafoetida
  • Salt to taste
  1. Method :-
  2. Sift flour and salt together.
  3. Add cream, ajwain and mix well.
  4. If needed add water to knead dough.
  5. Cover with moist cloth and keep aside for 30 minutes.
  6. Knead the dough again, cover and keep aside.
  7. For filling :-
  8. Grate cauliflower, mash potatoes and chop green chillies.
  9. In a hot pan roast cashews till light golden.
  10. Add cauliflower, green peas and masala.
  11. Add all other ingredients and mix well and cook properly.
  12. Let it cool.
  13. To proceed :-
  14. Make small lemon size balls of the dough.
  15. Roll a puri cut into half, take one, fold into cone,
  16. Fill with one tablespoon, filling,
  17. Seal open edges to form triangular pyramid.
  18. Seal edges and corners well with moist fingers.
  19. Preheat oven.
  20. Roast by setting oven at 205° for 10-15 minutes or till golden brown.
  21. Serve hot with green and tamarind chutneys.
MAKE FILLINGS FOR SAMOSA OF YOUR CHOICE Shredded Cabbage, Carrot and Capsicum stir fried in Soy Sauce, Ginger, garlic and green chilly. Boiled shredded chicken stir fried with the vegetables of your choice. Boiled egg chopped and mixed with cooked vegetables. Use leftover dry subzi as filling.Grated Paneer with green peas. Grated cheese and green peas.
